During our stay in MIlan, we took a day trip to Turin and our first stop there was Freedom, which is a gluten free pastry shop founded in 2013. The owner, Domenica Bevilacqua, opened the shop shortly after becoming diagnosed as celiac. Due to the important role that food plays in Italian culture, she sees celiac disease as a social problem and opened the shop to provide welcoming and inclusive food.
She has succeeded! Freedom is a fairly large 100% gluten free establishment with a wide variety of safe-for-celiac offerings and lots of seating including a spacious upstairs dining and lounge area. We visited during the Christmas holidays and there were lots of speciality goods for sale including panettone and holiday cookies. Freedom’s regular gluten free offerings include pizzas, focaccia, arancini, sandwiches, desserts, and, most importantly, cornettos (Italian croissants).

When did we go? November 2024
What’s good? We tried the pizza and cornetto. The pizza was simple and tasty with a focaccia-like crust. The espresso was also pretty solid.
How are the croissants (bakeries)? The croissant was definitely buttery and flaky, but also a little spongey. The filling–we got frutto di bosco or mixed berries–was also pretty sweet.
Toast’s opinion? Toast was welcome in every place we visited in Italy during our November/December 2024 trip and this place was no exception.
Verdict: Freedom ensures that celiacs aren’t left out of food-centered celebrations by offering a wide variety of treats and everyday staples in a welcoming environment. If we lived in Turin, we would visit weekly.
