Strasbourg (aka the capital of Christmas) is located in the Alsace region of France, which features a unique blend of French and German cultures. One example of traditional Alsatian cuisine is the flammekueche aka tarte flambée. Also known as “Alsatian pizza,” this tasty dish features a thin dough and a variety of toppings. The most traditional combo is a mixture of crème fraîche and fromage blanc, bacon strips and onions. Lucky for us, Mama Bubbele offers a gluten free version of this local delicacy! This place is so popular that you definitely need reservations. We booked the first seating of the evening and when we arrived 10 minutes before opening, there was already a substantial line. Inside the building the tables are close together and diners are restricted to placing 2 flambées per order. In addition to the main attraction–the flambées–you can also sample Alsatian wine by the glass and local beers.
Where is this place? Mam Bubbele is located in the Strasbourg city center making it a convenient stop for dinner if you’re visiting during Christmas market season
When did we go? December 2023
What’s good? We tried two different savory gluten free flambées and then rounded out the meal with a sweet apple cinnamon one. The gluten free flambées looked slightly less bubbly than their gluten-containing counterparts, but they were nonetheless delicious. All three dishes were easily devoured and paired nicely with one of the white wines. Mama Bubbele
Toast’s opinion? Toast was welcome in the restaurant and found comfy perch on a fur covered window sill during our meal.
Verdict: Mama Bubbele may be the only establishment serving gluten free flambées in Strasbourg, but it’s also probably one of the best places to try this Alsatian delight.
